Tadka Dal

We'll be serving our favourite Tadka Dal. I first watched this being made by the original Thali chef 20 odd years ago, and have made it loads of times since, with a little adjustment each time. The important factors seem to be softly cooked pulses, a decent amount of oil, and onions and garlic just the other side of golden. Tempered brown mustard seeds are also key. The rest is pretty variable according to your taste.
